Some of my favorite parts:

Whenever I listen to the parts of the chorus of Sing the story where Luke Collins partly adds the high voice it will give me goosebumps: https://www.youtube.com/watch?v=Ef4zRWNfcug#t=02m54s

To listen to this part of Veni, Veni Emmanuel is simply a pleasure: https://www.youtube.com/watch?v=94aEblnckkc#t=03m12s

Liam's three Aeterna-Parts in Libera! https://www.youtube.com/watch?v=ZisEloh_Cks#t=03m24s

The part of Coventry Carol with the blend of several different pitches: https://www.youtube.com/watch?v=3iVI2d3Y4WU#t=01m47s

Good topic and good choices. While so many songs have some components that stand out these are the ones I think I have noticed most.

Nothing beats the intro to "Angels We Have Heard on High"!

This part of "Venite Adoremus" that sounds like a choral variation of a Buddhist chant - the lower parts anyway.

This part of "Hymn to Mary" and the word "run" in particular

Oh yes, excellent!
One of the greatest outros, on the other hand, for me has Gloria: https://www.youtube.com/watch?v=66CHya51Y8U#t=03m08s

I'm sure it's very fresh in most everyone's minds, but the building part of 'Total Praise':

And 'Prayer' from 2:55 (including the buildup):
